We receive the escargots in our cold storage chambers. In our manufacturing facilities we wash them, right before the cooking.
After they’ve been cooked we sort them out and we process them in the adequate manner, be it sterilization or ultra-freezing. Then we conserve them in our cold storage chambers, before the packaging and the shipping in fridge trucks.
We take care of this process in the most modern facilities, where we own a liquid nitrogen tunnel, autoclave, cold storage and freezing chambers, sorting machines and cookers where we take care of passing the strictest health regulations with flying colors.
